What is the 'Paleo Diet'?

The diet is based on the belief that human beings have not yet evolved with a tolerance to grains and dairy or namely the 'agrarian' lifestyle brought about by farming and producing our own food sources. Instead it focuses its attention on returning to our ancestral roots of the hunter gatherers by consuming only foods that our ancestors would have eaten like grass fed organic meat, wild game, vegetables and minimal fruit.
The diet itself is not restrictive as some would believe and has numerous varieties of foods that can be consumed liberally without fear of gaining weight or causing any aggravation to one's body.


What will the 'Paleo Diet' do?

Due to the connection between processed carbs and refined sugars with diabetes, weight gain and heart disease the 'paleo diet' claims to aid in weight loss, reduce the chance of developing type 2 diabetes and heart disease and may help with autoimmune diseases. Only minor scientific studies have been carried out to prove the validity of the diet and many sceptics still remain. However a diet that encourages the consumption of healthy natural and unprocessed alternatives to our current lifestyle is well worth looking at particularly when over 60% of the worlds population are obese or overweight.

Day 7 ~ Making Paleo Milk and Paleo Chocolate

Today has been really great!
First I spent the greater part of it experimenting with making all kinds of goodies for the kids...
and myself... hehe
Then I must admit I got a little frazzled towards the middle of the day trying to juggle getting all my housework done, blogging, cooking and spending time with the family including the bunnies.
...So I guess you are wondering how the goodies turned out????? well... to be honest... they turned out FANTASTIC!!
Then, not only did I make yummy treats but I also made some nut milks as well! ...and again... turned out amazing! Keep reading to find out just how good...

Before Breakfast

Making Chocolate


What you'll need;
  • 1/3 cup organic cocoa powder (approx 100ml)
  • 125ml organic cocoa butter (grated
  • 125ml coconut butter
  • 1 tbsp raw unpasteurised honey
  • 1 tbsp coconut sugar
  • 60ml chopped walnuts
  • 60ml goji berries

Coconut butter is available from all good health food stores. Use sparingly as it is very costly! :) ...but is also very delicious!!!

Raw unpasteurised honey is also available from all good health food stores. It is available in fresh tubs during the spring and summer months.

These products can also be used in various recipes as alternatives to butter, oil and sweetener.









Method


Grate the cocoa butter

Combine all ingredients in a heat proof bowl and place over a pot of boiling water (on low) to melt the cocoa butter and coconut butter with the other ingredients.

Add the goji berries and walnuts.


Place on a tray or dish lined with baking paper and place in the fridge or freezer til set.

Fridge usually takes 60 minutes and freezer 30 minutes.

Making Paleo Milk ~ Coconut Milk

Step 1. Place 250g of dessicated coconut in a bowl and add 500ml - 1 litre of warm water. I would prefer to use fresh coconut but they are not always easy to come by. Dessicated coconut works just as well.

Step 2. Allow to stand for an hour or more stirring occasionally.

Step 3. After coconut mixture has been sitting for a while and thickened slightly pour into a blender. Blend multiple times, let stand, blend again, let stand, blend again.

Step 4. Use a (fine-holed) metal strainer or muslin cloth to strain the milk from the coconut pulp. I used a metal strainer and used the back of a soup ladle to really squeeze the milk out of the coconut by pressing and rolling into the mixture.

Step 5. With the coconut pulp that is left over you can repeat steps 1-4 one more time to get out even more milk.

Step 6. Divide into daily portioned containers (approx 500ml) and freeze to keep from spoiling.


Making Paleo Milk ~ Almond Milk


Making almond milk is a similar process to making coconut milk only with almonds. It requires the same technique although I like to add a few extras for flavour with almond milk otherwise it can taste a bit funny.

Step 1. Blanch the almonds in a bowl with hot but not boiling water, allow to stand for 2 hrs.

Step 2. Add cinnamon, coconut sugar and 2 drops of vanilla essence to the water, stir and allow to stand for another 30 minutes.

Step 3. Pour the blanched almonds and water into blender. Blend blend blend... as often as you like, remember the more you blend the more likely you are to get more milk. You can also add more water (filtered) at this stage.

Step 4. Use muslin cloth to strain almonds because it is the only method that will be effective.

Step 5. Portion and freeze to stop from spoiling.

* note the almond milk will have a sweet and very pleasant taste unlike shop bought almond milk and without all the nasties.
