What is the 'Paleo Diet'?

The diet is based on the belief that human beings have not yet evolved with a tolerance to grains and dairy or namely the 'agrarian' lifestyle brought about by farming and producing our own food sources. Instead it focuses its attention on returning to our ancestral roots of the hunter gatherers by consuming only foods that our ancestors would have eaten like grass fed organic meat, wild game, vegetables and minimal fruit.
The diet itself is not restrictive as some would believe and has numerous varieties of foods that can be consumed liberally without fear of gaining weight or causing any aggravation to one's body.


What will the 'Paleo Diet' do?

Due to the connection between processed carbs and refined sugars with diabetes, weight gain and heart disease the 'paleo diet' claims to aid in weight loss, reduce the chance of developing type 2 diabetes and heart disease and may help with autoimmune diseases. Only minor scientific studies have been carried out to prove the validity of the diet and many sceptics still remain. However a diet that encourages the consumption of healthy natural and unprocessed alternatives to our current lifestyle is well worth looking at particularly when over 60% of the worlds population are obese or overweight.

Day 11 ~ Trying a New Batch of Paleo Muffins

Before Breakfast


5ml omega 3 fish oil
1 VitaKlenz
5ml slippery elm paste

Breakfast

After breakfast... Muffins!

These were amazing! I just thought I would do up a batch without following a recipe and they turned out perfect! See... baking by instinct can be a good thing...

For those who want to make these at home I will try and remember exactly what I did that made these turn out so good...
hmmmm.....

Ingredients;
5 eggs lightly beaten
Roughly 100ml of home made coconut milk
Vanilla essence
1 cup almond meal
1 tbsp coconut flour
1 tbsp ground cinnamon
1 tbsp coconut sugar
1 large tbsp of coconut butter
2 tsp baking powder
1/2 cup Goji berries

Method;
Mix all the dry ingredients together including the baking powder. In a separate bowl mix the egg, milk and vanilla essence. Mix both lots of ingredients together til thoroughly combined and then add the Goji berries. Spoon into paper cases and place in a pre-heated oven at 150 C.
Keep an eye on them as they will not require too much time in the oven, only 20 minutes or so... when golden brown and cooked in the centre (test with a clean skewer), pull them out to cool.

Lunch

Fish en Papillote with lemon zest vinaigrette


 

Lemon Zest Vinaigrette

1/2 cup olive oil
2 cloves garlic crushed
2 tbsp apple cider vinegar
1 heaped tsp of anchovies
zest of 1 lemon

Use a stick blender to emulsify the vinaigrette.

Dinner

Eggplant Lasagna




Ghee

I am a big believer in only having fermented dairy on the paleo diet (and only to maintain healthy digestion), other than that I don't believe in eating hard cheeses etc. After I finish my leaky gut cleanse I will most likely only consume home made live cultures/whey made from raw milk. Recently I came across Ghee and honestly think that this is the only dairy exception on paleo considering it is 100% milk fat with no other additives. It tastes like butter and has a higher resistance to heat than regular butter so it doesn't burn like butter does. It tastes amazing and lifts dishes like fish en Papillote baked in the oven as well as garlic mushrooms. Ghee is a must in any paleo kitchen.

    Also the favours that are in the dressing for the salad that you have put with the fish amazing! :)
    And to top it off the egg plant lasagna was the best by far.
